The same wine-making process is followed as for our Saint Nicholas Commandaria until this wine is chosen for its superior quality. It is during ageing when the wine undergoes a rigorous selection. According to tasting the best barrels are left for a longer oxidative ageing, obtaining due its evolution a greater concentration of the aromas, greater aromatic complexity due the significant development of the tertiary aromas , and a greater balance, resulting therefore a very intense and complex wine.

Vineyards: Located within the Commandaria Controlled Apelation of Origin.
Soil: limestone, stony
Climate: Mediterranean, mild winters with the majority of the annual rainfall, very hot and dry summers.
Altitude: from 600 to 800 m
Age of the vineyards: from 50 to 80 years old
Farming: rainfed crop
Vine training: cup-shaped (goblet)
Varieties: ungrafted grapevines (Franc de Pied): Mavro 55 %, Xynisteri 45%
Production: 5.000 liters

This wine is produce only in certain vintages of extraordinary quality.

The duration of the wine aging and maturation is determined by decision of the winemaker considering its quality, complexity and guarding potential.
For this 2000 vintage the aging was 15 years in french oak barrels. The bottling of this wine dates on April of 2015, so the maturation inside the bottle has been about 5 years to date.
No enological products are added to make this wine, with the exception of sulfite, which is added in very low doses before the bottling. No stabilization treatments are carried out to preserve the sensory qualities of this wine. A filtration is done before bottling. For these reasons it may be possible to observe some sediment or precipitate of the natural coloring matter in the bottle, not affecting in any case the sensorial quality of this wine.
