A light dry rosé wine produced from the indigenous Mavro and Oftalmo, blended with Shiraz and Muscat. This wine shows an attractive pale pink colour, aromas of red fruits and a great freshness on the palate. Served at 10-12o C. It can be enjoyed at any time and it is an ideal accompaniment to poultry, salmon pie, sea-bream in papillote, pasta and cheeses.

Description

Place of Origin: Cyprus
Grape Varieties: Mavro (60%), Shiraz (20%) Lefkada (20%)
Grape Production area: Limassol.
Soil: rendzina, calcareous, shallow and stony, limestone rock
Climate: Mediterranean, mild winters with the majority of the annual rainfall, very hot and dry summers.
Altitude: 800-900 m
Crop: rain-fed
Vineyard age: 15-40 years
Vine training: cup-shape
Grape yield: 5000-6000 kg/ha
Harvest: starts from beginning of September until mid October for higher and fresher areas. The harvest is carried out by hand in boxes of 20Kg.

Vinification: Short maceration of 1 h in the press. Cold debourbage and fermentation in stainless steel tanks at a controlled temperature of 16 to 18 C. The wine stays with the lees for a minimum of 3 months. Finning with bentonite and sterile membrane filtration before bottling.
