A young and fruity wine with Mediterranean character made from Xynisteri grape, endemic variety of Cyprus. The harvest of the grapes is slightly anticipated with the aim of obtaining a fresher and lighter wine maintaining its aromatic quality and balance in the taste. The wine offers aromas of pip fruits, lemon and herbaceous hints of fennel. Zesty mouthfeel, with a medium persistence, mineral and slightly salty at the finish. It is an ideal accompaniment to white meat and fish. Served at 10o C.

Place of Origin: Cyprus
Grape Varieties: Xynisteri (95%), Muscat of Alexandria (5%).
Grape production area: Limassol.
Soil: rendzina, calcareous, shallow and stony, limestone rock
Climate: Mediterranean, mild winters with the majority of the annual rainfall, very hot and dry summers.
Altitude: 600-850 m
Crop: rain-fed
Vineyard age: 15-40 years
Vine training: cup-shape
Grape yield: 6000-7000 kg/ha
Harvest: starts from beginning of September until mid October for higher and fresher areas. The harvest is carried out by hand in boxes of 20Kg.
Vinification : Destemming and crushing. Short maceration (1-2 h max) or direct pressing. Cold debourbage and fermentation in stainless steel tanks at a controlled temperature of 16 to 18 C. the wine stays with the lees for a minimum of 2 months. Finning with bentonite and sterile membrane filtration before bottling.
Wine Production: 35.000 bottles

It is an ideal accompaniment to white meat, fish and seafood. To be served at 10oC.
