Plegma White 2018/2019
Xynisteri (85%) Muscat of Alexandria (15%). Fermentation in old Commandaria barrels (age of the barrel over 12 year old) and aged with the lees in the same barrels for 5 months. Some of the barrels undergo malolactic fermentation. At the end the wine is selected by barrel to make the final blend, according to the best characteristics. Minimum intervention possible, that is to say “to intervene just the necessary” to maintain the highest quality.
Experimental series PGI wines
The result is a complex wine where the varietal aromas ( pip fruits, pinnapple, citrus, etc) combined in harmony with the aromas from the fermentation, the aging and of course the delicate aromatic contribution of the Commandaria wine that was absorbed in the oak barrels (vanilla, honeycomb, oriental spices like turmeric). The wine is balanced in the mouth, has a silky texture, rich volume and tasty aftertaste.
